Bayou To Camont—a New World Cookbook in an Old French Kitchen

Wednesdays are the mid-week market I favor the most throughout the year. Less hype and a more relaxed vibe, with time enough to share a coffee and pastry with friends and wish a cheery Bonne Année to my farming neighbors. Wednesdays offer more of my ideal market values—more careful shopping and less temptation for unnecessary goods like too many cheese choices, long lines at the best stands, or just swanning around like a tourist without a plan.

With just a tiny population of 2200, the good people of Lavardac (and her neighboring villages) gather to shop in the town park for the weekly market. Several dozen food producers and other vendors sell their wares, including fresh and cured pork from the Chapolard pig farm, backyard poultry from a single card table worth of plucked yellow-skinned birds, local cheese, honey, wine, and Armagnac. I am on a mission for one thing—un lapin, a rabbit.
